Thee Ingredients
Prep For the Salmon
- 2 salmon fillets, cut into cubes
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon sesame oil
- 1 garlic clove, minced
- 1 teaspoon ginger, minced
- Sesame seeds for garnish
For the Rice
- 2 cups cooked sushi rice
For the Veggies
- 1 cup shredded red cabbage
- 1 cup shredded green cabbage
- 1 avocado, diced
- 1 cucumber, thinly sliced
- 1/2 cup shredded carrots
For the Dressing
- 1/4 cup mayonnaise
- 1 tablespoon sriracha (adjust to taste)
- 1 teaspoon rice vinegar
Thee Instructions
1. Marinate the Salmon: In a bowl, mix soy sauce, honey, sesame oil, garlic, and ginger. Add the salmon cubes and let them marinate for at least 15 minutes.
2. Cook the Salmon: Heat a non-stick pan over medium heat. Add the marinated salmon cubes and cook for about 3-4 minutes on each side until they are cooked through and slightly caramelized. Garnish with sesame seeds.
3. Cook the Rice: If not already cooked, prepare the rice according to package instructions. For best results, use sushi rice and cook it with a bit more water than usual to make it sticky.
4. Slice and Dice: Thinly slice the cucumber and shred the cabbages and carrots. Dice the avocado just before assembling the bowl to keep it fresh.
5. Mix the Dressing: In a small bowl, combine mayonnaise, sriracha, and rice vinegar. Mix well until smooth.
6. Assemble: Start by adding a generous serving of rice to each bowl. Arrange the cooked salmon cubes on one side. Add the shredded red and green cabbage, cucumber slices, shredded carrots, and diced avocado in sections around the bowl.
7. Drizzle the Dressing: Drizzle the spicy mayo dressing over the top of the bowl. .
